LyoAlbaricoque tile

For the TPT syrup

• 100g sugar
• 100g water

1. Mix both ingredients in a saucepan and bring to the boil.
2. Keep in the refrigerator.

For the LyoAlbaricoque tile

• 10 g powdered LyoAlbaricoque
• 45 g TPT syrup (prepared beforehand)
• 10 g flour
• 10 g butter pomade

1. Put the syrup with the powdered LyoAlbaricoque and the flour in the Túrmix and blend to obtain a very fine mixture.
2. Add the butter and mix. Leave to rest in the refrigerator.
3. Put the Silpat Croquanter on a flat surface and on top of it a Croquanter stencil. Spread the LyoAlbaricoque tile with a spatula, remove the stencil and bake at 140°C for 20 min.
